Everybody does. It is involuntary, it happens before you have decided anything, and bare palms on gravel at 20 mph is a long recovery from a cheap mistake.
The other reason
Gloves stop sweat and vibration from loosening your grip on a long ride. Hand fatigue is a real failure mode on a bike with instant torque.
Fit
A glove that bunches in the palm creates hot spots and blisters. Fingers should reach the end without pressing, and the palm should be smooth when you close your hand on a bar.
When people skip them

About Gloves

How riders choose. Gloves are the cheapest piece of protection and the one riders skip most. On an electric dirt bike, hands take the first hit in a tip-over and the vibration through the bars on every ride, so a glove with a snug fit and grip on the palm keeps throttle feel consistent and saves skin. Sizing matters more than styling. A glove that is too big bunches at the palm and a glove that is too small restricts the throttle hand, so check the size information on the product page against your own hand measurement. Riders who use a phone on the bars should read the product page for touchscreen fingertips before buying for that reason.
